Easy Salsa Chicken
Seasoning chicken strips with Taco Seasoning Mix great way to spice up dinner. Sweet and spicy Salsa Chicken is delicious served with rice and black beans.
Prep Time: 5 minutes
Cook Time: 20 minutes
Makes 4 servings
Ingredients:
1 package (1.25 ounces) McCormick Taco Seasoning or your own homemade seasoning.
1 pound boneless, skinless chicken breasts, cut in strips
2 tablespoons oil
1 can (14 1/2 ounces) no salt added diced tomatoes drained with the liquid saved for later.
1/3 cup apricot or peach preserves
*Optional 1 can green chilies instead of the preserves.
Directions:
1. Empty Taco Seasoning on a plate or into a plastic bag. Add chicken strips and toss to coat.
2. Heat oil over medium heat in a large skillet. Add chicken and saut 5-7 minutes or until one.
3. Stir in tomatoes and preserves. Cover and simmer 10 minutes. If too dry add back some of the canned tomato liquid saved earlier.
Serve over rice.
**For a little more southwestern flavor add black olives, corn and black beans.
