CARAMEL CANDY-BAR FUDGE
MAKES 2 3/4 POUNDS.
1/2 cup butter
1/3 cup unsweetened cocoa powder
1/4 cup brown sugar
1/4 cup milk
3 1/2 cups powdered sugar
1 tsp vanilla
3O caramels, unwrapped
1 tbs water
2 cups peanuts
1 cup chocolate pieces
Line a 8x8x2" baking pan. Set pan aside. In a bowl, microwave butter on high 1 min. or until melted. Stir in cocoa, brown sugar, and milk. Microwave on high 1 min. or until mixture boils. Stir in powdered sugar and vanilla until smooth. Spread fudge in the pan. -In another bowl, combine caramels and water. Microwave on medium 2 min. or until caramels are melted. Stir in peanuts. Microwave on medium 45 seconds or until mixture is softened. Spread caramel mixture over fudge layer in pan. -In a bowl, heat chocolate pieces in microwave on medium 2 min. or until melted. Spread over caramel layer. Chill 2 hours. Use foil to lift fudge from pan. Peel off foil, cut fudge into squares. SERVE & ENJOY...
