CHOCOLATE PEPPERMINT CREAM COOKIES
MAKES 3O COOKIES.
1 1/2 cups crushed chocolate sandwich cookies with white filling
2 cups powdered sugar
3 tbs butter, melted
2 tbs butter
2 tbs milk
1 tsp peppermint extract
6 oz bittersweet chocolate, chopped
2 tsp shortening
Heat oven to 35O degrees. Line an 8x8x2" baking pan, set aside. In a bowl, combine cookies and melted butter. Press mixture into bottom of pan. Bake 8 min. Cool slightly in pan. Combine powdered sugar and butter in a processor. Add milk and peppermint extract to make a paste. Spread peppermint mixture over crust. Freeze 45 min. In a bowl, combine chocolate and shortening. Microwave on high 1 min. until chocolate is melted. Let chocolate cool 15 min. pour over mint layer. Lift uncut bars out of pan. Use a 1 1/2" round cookie cutter to cut mixture into rounds. SERVE & ENJOY...
