Low-Fat Cherry Jelly
Ingredients:
1 cup each sour cherries, water
3 tsp. granulated sugar replacement
1 tbsp. lo-cal pectin
Directions:
Rinse cherries and remove stems. Combine cherries and water in saucepan. Bring to boil, reduce heat, simmer 5 minutes. Strain; reserve juice. Add sugar replacement and pectin to 1 cup (250ml) juice, add extra water, if necessary, to make up juice. Stir to blend completely; return to heat. Bring back to boil, boil 1 minute. Remove from heat. Boil slightly. Pour into serving dish or jelly jar; chill
