This is absolutely soooooooooo good. We love it especially at night bcuz IF we eat it is not a heavy meal unless we go out with friends or over to friends
house. We prefer the corn tortillas but some people like the flour better. So if you are doing this for several people I recomment you have both on hand.
This serves 4 well.
1lb white skinned potatoes, boiled
8oz Chorizo Mexican sausage, remove casing (substitute low fat sausage)
3/4 cup salsa
1 medium tomato, diced
1 white onion, diced
1 jalapenom chopped (I leave the seeds in)
8 eggs, lightly beaten
Grated cheese (Queso Blanco, Cheddar or Jack)
Warm tortillas (corn & flour)

In cast-iron or non-stick skillet, fry Chorizo sausage, jalapeno pepper and onion breaking up lumps with a
spoon, until fully cooked. Drain fat, add potatoes and return to burner for 5-6 minutes or until brown. Add tomatoes, and salsa and cook for 3-4 minutes. Add
eggs and stir until eggs are scrambled. When set, transfer to a serving dish. Serve with warm tortillas, grated cheese and salsa on the side.
Serves 4-6.
