This is my favorite annual holiday cake. I know I have posted it
here before but here goes again. This is so good.
Daddy's Fresh Apple Cake
This is a cake that my dad made at least one every year about two weeks before Thanksgiving and another one or two about 2 or 3 weeks before Christmas. They were always our favorite Christmas confection and when I moved away from home this was always one of the first things I looked for when I came home for Thanksgiving and Christmas.
Mix 2 cups sugar and 1 ½ cups salad oil (vegetable oil) in a bowl until well blended add 3 eggs 1 at a time beating 1 minute after each egg. When the eggs are incorporated add 2 teaspoons vanilla to this mixture and set aside.
Mix the following dry ingredients in a bowl as listed:
3 cups flour
1 tsp soda
1 tsp baking powder
1 tsp salt
1 tsp nutmeg
1 tsp cinnamon
1 tsp ground cloves
Add these dry ingredients to the liquid mixture and mix well then add the following in this order:
1 cup chopped nuts (I used black walnuts but my dad always used pecans.)
1 cup chopped dates
3 cups chopped red delicious apples (I used Fuji apples this year and think I like them even better.)
Pour the complete mixture in a cake ring pan and bake at 325 for 1 ½ hours or until a toothpick inserted in the middle comes out clean.
