When I fry chicken...........I mix a little flour with cold water.........salt, cayenne pepper, garlic powder and put my chicken parts in there and place in the frig. for at least 6 hours. OVERNIGHT is better. Next i roll in seasoned flour and fry in hot oil. Usually 20 min on each side...Actually I know this is gonna sound stupid but I can tell when my chicken is done. The grease stops popping and it floats up to the top and I don't know how to explain it but I can tell. I love spicy fried chicken.
