Tallie, next time you make the Fresh Apple Cake instead of sprinkling the sugar and spices on top try this; When you grease the pan, instead of coating the inside of the pan with flour, use your mixture of spices and sugar mixed together and coat the inside of the pan with that. It will make a nice crisp flavorful outside and a nice moist inside. I've never tried the spices in the pan with the sugar but sure will next time. I think I will also add a pinch of clove to your cinnamon, nutmeg and sugar. I love the taste of clove in baked goods and bet it would be good in this.
